At the end of August 2024, Scramblin’ Egg was named the winner of the first Hatch Bloomington competition, a retail pitch competition that gave ambitious Bloomington entrepreneurs the opportunity to win a $100,000 financial assistance award, significant exposure and a robust
business network.

Since then, Scramblin’ Egg has been busy working with the Minneapolis Regional Chamber to develop a plan and lay the groundwork for their transition from a food truck into a brick-and-mortar space in Bloomington.

After finishing their food truck season in November, the Scramblin’ Egg team became even busier renovating their new space and developing new additions to their menu, such as hashbrowns and perhaps a biscuit bowl. They hope to open for business in March.

“Everything has taken a little longer than expected,” said owner Grant Veitenheimer. “It’s all so new to us. We are grateful for all the support and everyone’s patience as we make this transition.”
